Ziti with Turkey Tenderloin Tomato Sauce

This hearty tomato sauce is flavored with mushrooms, onions and carrots. For a twist, top with grated mozzarella and Parmesan cheese and bake until heated through and cheese is melted.

Ingredients

    3 tablespoonsextra-virgin olive oil, divided
    1 package (8-ounce)cremini mushrooms, coarsely chopped
    1/2 mediumyellow onion, chopped
    3carrots, grated
    3 clovesgarlic, finely chopped
    1 can (28-ounce)whole tomatoes, with their liquid
    1 can (6-ounce)tomato paste
    1 teaspoondried basil
    1 teaspoondried oregano
    1/2 teaspoonfine sea salt
    1/2 teaspoonground black pepper
    1 poundturkey tenderloin, cut into 1-inch cubes
    3/4 pounddried ziti, cooked according to package directions

Method

Bring a large pot of salted water to a boil over high heat. 


Add the pasta and cook according to package directions. Drain and set aside.


Heat 2 tablespoons of the oil over medium heat in a large pot. 


Add mushrooms, onion and carrots and cook for 5 minutes. 


Add garlic, tomatoes and tomato paste and break up tomatoes with a large spoon. 


Add basil, oregano, salt and pepper. 


Cover and simmer over low heat for 20 minutes, stirring often.


Meanwhile, heat remaining 1 tablespoon oil in a large skillet. 


Add turkey and cook, stirring occasionally, until browned on all sides and just cooked through, about 5 minutes. 


Transfer turkey to pot with tomato sauce and simmer for another 5 minutes, or until piping hot. 


Toss with ziti and serve.
