Each fall, I look forward to indulging in a variety of butternut squash recipes, some simple staples like Roasted Butternut Squash, some popular like Classic Butternut Squash Soup and others that are more experimental, like butternut squash pancakes served hot with maple syrup.

Roast butternut squash cubes. Gently toss with leafy green salads, stir into hot grain dishes, toss with roasted apples or pears, or serve with chopped dried fruits such as figs or dates. Don’t forget roasted pecans or your other favorite nuts!
Roast and mash with your favorite cheese. I love sharp cheddar to balance the sweetness of the squash. Serve it as you would mashed potatoes.

Make a dip or sandwich spread by combining roasted butternut squash, grated cheese, herbs like thyme or chives, a dash of milk or almond milk, and some seasonings like salt, pepper, garlic, etc. Bake in a casserole dish, and then serve with pita chips, corn chips, vegetable dippers or crackers.

Peel and slice butternut squash into 1/2-inch pieces. Brush with olive oil and grill on both sides until tender.
Bake butternut squash stuffed with mushrooms, breadcrumbs, onions and herbs. Or, make your favorite stuffing recipe and pile it high in scooped out squash halves — just be sure to prebake the squash a bit so everything cooks at the same rate.
Pair Butternut Squash Risotto with a veggie side for a hearty cool-weather meal.
Butternut squash also makes a great replacement for pumpkin in a variety of baked goods and cookies. Simply use equal amounts when substituting.
