Get the Recipe: Coconut Breakfast Cookies
I love the irony of cookies for breakfast in January when everyone is in the throes of New Years resolutions. I promise though, these will feel right at home with all your healthy eating! This recipe has everything you love about your favorite granola bar, but it’s soft enough to really feel like a cookie. The texture play of the chewy coconut, crisp walnuts and the little pop of chia seeds is super delicious, too. Plus, the protein powder gives the cookies a little boost of vanilla flavor and acts as a binder (in concert with mashed banana) for the vegan treat.
