Matzoh ball soup is the ultimate comfort food and a must for any Passover celebration. This version is vegetarian, which makes it unusual and particularly suited to large celebrations when it’s harder to keep track of everyone’s dietary needs. Luscious roasted garlic stands in for the traditional schmaltz (chicken fat) in the matzoh ball mixture, giving the matzoh balls richness and interesting layers of flavor. There is a magical addition of a fresh jalapeño pepper, too, which gives the broth a subtle warmth that I find pretty addictive!
