Serves: 4
Prep time: 20 minutes
Total time: 20 minutes
  • 4 large watermelon slices, about 1-inch thick
  • Juice of 2 limes, divided
  • 2 teaspoons fine sea salt, divided
  • 1/2 teaspoon chile powder, plus more to taste
  • 2 cucumbers, cut into “noodles” (learn how)
  • 2 cups baby arugula
  • 2 teaspoons extra-virgin olive oil
  • 1 teaspoon honey
  • 1/3 cup pumpkin seeds, toasted
  • Ground black pepper, to taste
Place watermelon slices on 4 plates. Sprinkle with half the lime juice, 1 teaspoon salt and chile powder.
In a large bowl, combine cucumber noodles, arugula, remaining lime juice, remaining salt, olive oil and honey. Toss until evenly mixed and noodles are coated. Divide noodles among the plates. Garnish with pumpkin seeds, black pepper and extra chile powder to taste. Serve immediately.
It’s hard to resist a popsicle on a cold day, and this watermelon-coconut version hits the spot. If you like, add granola or coconut to the bottom of the pops before freezing for extra flavor and crunch.
Makes 8-10 popsicles
Prep time: 10 minutes
Total time: 6 hours 10 minutes
  • 2 12-ounce bottles WTRMLN WTR
  • 3/4 cup full fat coconut cream
  • Granola (optional)
  • Unsweetened coconut flakes (optional)
In blender, combine WTRMLN WTR and coconut cream. Blend until smooth. Distribute evenly among popsicle molds. Place on mold lid and insert popsicle sticks. Freeze for 6 hours or until solid. To remove the popsicles, remove the lid and squeeze sides of mold to gently loosen. Run outside of molds under warm water, if needed.
To add crunch, fill molds almost to the top, then sprinkle on granola and/or coconut flakes before covering and adding sticks.
This bright fruit salsa is perfect for poolside snacking or spooned over grilled chicken or fish. Pair it with WTRMLN LME and your favorite corn tortilla chips, or Siete Foods Grain Free Tortilla Chips.
