Organic Filet of Steelhead Trout or Wild Salmon seasoned with dill, sea salt, red and/or black pepper and organic garlic granules, and a drizzle of Organic Mediterranean Olive Oil, baked at 350 degrees for 4 to 6 minutes skin side down. Remove from oven to fridge and chill. Next day take it from the fridge and let sit for 10 minutes in the center of a dinner plate at the table while slicing 1 large, or 2 small organic zucchini in thin coins. Lay in a long row of "coins" on either side of filet and top with Slightly chilled OrganicSesame Miso Dill Sauce: 2T of Organic Sesame Tahini, 2T of Organic Chickpea Miso, 2T Organic Sesame oil, 1/4 to 1/2 teaspoon of organic red cayenne pepper, 1T of organic garlic grans. , 1/2 cup pure water and a heaping T of Organic dill finely sifted or chopped, a quick light squeeze of organic lemon (optional)Mix with fork until smooth and let sit for 3 minutes before spooning a thick line of sauce down the center of each row of zucchini coins. On an unpatterned plate with the fish filet in the middle of the two rows, this makes for an artistic, cool, satisfying and scrumptious summer presentation!
