Easy Summer Breakfasts

Breakfast is better in the summer. It’s just true. Trips to the market leave you with as many in-season fruits and vegetables as you could ever want. With a little creativity, this abundance can be transformed into simple, delicious breakfasts, perfect to start all your summer mornings.

Recipe: David Eyre’s Pancake

The surprise of this breakfast comes at the end, when you open the oven door to find a poufy, toasted, utterly delectable-looking pancake. It soon collapses as you shower it with confectioners’ sugar and lemon juice. Slice it up and devour it. It’s sweet and tart, not quite a pancake and not quite a crêpe. But lovable all the same. Top with fresh fruit.

Recipe: Cherry Clafoutis

A cross between a flan and a tart, clafoutis is one of the simplest French pastries to make. When cherry season is over, try this recipe with berries instead.

Recipe: Triple Pomegranate Smoothie

This smoothie uses pomegranate in all of its forms—juice, arils, and molasses—so there's no way the fruit doesn't sit front and center, in all of its glory. You can adjust the fruit to your desired consistency, but we love it nice and drinkable, just the way it is.

Recipe: Zucchini Bread

This rosemary- and orange-scented loaf cake feels both indulgent and virtuous. This is the kind of quick bread we love to keep around the house—to slice for breakfast, for snack, for dessert, for anything.

Recipe: Strawberry Apricot Breakfast Crisp

Leftover crisp makes such a good breakfast, why not make a crisp specific for the first meal of the day?! This one is full of early summer flavors as well as wholesome oats and nuts.
