New Year, New Vegan Recipes

Vegan Tempeh and Veggie Lasagna

We eat a wide variety of foods in my house, thanks in part to my never-ending desire to try new things. Although I was a very picky eater as a child, these days there’s almost nothing I’ll say no to, which means I’ve found lots of great dishes I might have passed by in my younger days. Lately I’ve been really embracing the veggies, with vegan recipes frequently gracing the table.

Vegan cooking (which means no animal products, including eggs and honey) is far from bland or boring. There is such a wide variety of flavors at your fingertips when you open up to all the options out there.

If you’re interested in trying out more vegan recipes, I’ve gathered a few of my favorites for you. Try them out for your next Meatless Monday, or any time!
