Cooking Department Demo: Winter Squash

 

Winter squash is versatile and easy to prepare, and is packed with carotenoids, such as the beta-carotene that gives its flesh a lovely orange hue. Many varieties also supply good amounts of vitamin C, niacin and potassium, making this nutrient-rich vegetable well worth adding to your recipe repertoire. Marja will feature a Butternut Barley Soup recipe from Rip Esselstyn's My Beef with Meat book.

Beans are a near perfect health food, low in fat and cholesterol and high in fiber, iron and folic acid. They're also delicious and an extremely economical and eco-friendly source of protein. Marja will discuss several varieties of beans while she creates and samples the Health Starts Here recipe: Winter Four-Bean Salad. Stop in for a chat and a taste!
