In addition to learning a few advanced cuts such as brunoise, rondelle, lozenge and paysanne, we’ll focus on cutting up a chicken, deboning and skinning fish and carving roast and fowl.  We’ll teach you how to “french” the bones of your roast so they look like they were done by a pro. Plus, we’ll de-mystify and utilize the French mandoline in preparing vegetables. Please bring your own chef’s knife with you to class. Paring and boning knives will be provided for instruction during the class.

Students also learn the basics of preparing homemade stocks and vinaigrettes, sautéing, and making a pan sauce.

Take your cake making and decorating up another notch with Part 2 of the Weekend Cakes 101 Class.  In this session, you will learn more about making and using buttercreams, marzipan and fondant to decorate those “weekend cakes” made in Part I.  To top it all off you will work with Chef John to make a “Princess Cake”, a traditional cake from Sweden.  A Princess Cake (Prinsesstårta in Swedish) consists of alternating layers of airy sponge cake, whipped cream, and thick pastry cream, all topped with a 2–3 mm thick layer of marzipan. A light dinner will be served.

If you haven’t got an Italian mamma to teach you how to make pasta at home, join us for a hands-on experience of the process! Making your own pasta is deeply satisfying and surprisingly easy. Students learn about a variety of available pastas, techniques for making basic pasta dough and using a pasta machine to roll and cut fettuccini and pasta sheets for ravioli. We’ll cut and fill ravioli; make delicious semolina gnocchi and prepare pasta sauces. At the end of class, you’ll sit down to an Italian pasta feast. MENU: Fettuccini with Prosciutto, Cream, & Nutmeg; Semolina Gnocchi with Classic Tomato Sauce; Spinach Ricotta Ravioli with Brown Butter Sauce; and Pappardelle with Bolognese.
