Baked Colby Sandwiches with Spicy Plum Chutney

Colby Jack is a mild cheese that melts to make a perfectly creamy cheese sandwich. The spicy plum chutney adds some zing to this otherwise ordinary dish.

Ingredients
- 4 slices multigrain bread
- 2 teaspoons salted butter, softened
- 4 tablespoons prepared spicy plum chutney
- 2 ounces sliced Colby Jack cheese (2 to 4 slices)
Method
Heat the oven to 375°F.
Spread one side of each slice of bread with 1/2 teaspoon of the butter.
Place slices butter-side down on a baking sheet and spread each with 1 tablespoon spicy plum chutney.
Layer cheese over two slices of bread, cover with remaining bread slices, making 2 sandwiches.
Bake until cheese is melted and bread is browned, about 12 minutes. Let sandwiches cool a few minutes before eating.
