Vegan Caramel Sauce

Ingredients
  • 2 cups pitted dates
  • 2 tablespoons chia seeds
  • 1 teaspoon pure vanilla extract
Method

Combine dates and 1 1/2 cups hot or boiling water in a medium bowl and let soak overnight. 

Combine all ingredients (including soaking water for dates) in a blender or food processor, and process about 2 minutes or until smooth. 

Add more warm water as needed to achieve the desired consistency. Store in the refrigerator up to 5 days.
