I’ve found the cure to beat the summer heat! It’s Grape and Watermelon Freezer Pops. For ultimate summer cooling, I suggest one after meals or as a snack. Repeat as needed.
Each summer I give thanks for watermelon. It’s a summertime gift from nature, delicious on its own or in beverages, soups, salads, salsas, mains, desserts and even condiments such as Pickled Watermelon Rind with Radishes.
This summer, make watermelon a priority for your picnics, poolside parties and outdoor barbeques. Here are some crowd and kid-pleasing ideas and recipes:
Make a watermelon smoothie with spearmint and honey.
Purée watermelon with grape or pomegranate juice; freeze into ice cubes for juices and other beverages.
The sweet, juicy flavor of watermelon is a perfect complement to the saltiness of cheese. The two are even better when combined in salads. Ideas include Watermelon and Arugula Salad, Tomato and Watermelon Salad with Feta and Mint, Watermelon Salad with Tomatoes, Goat Cheese and Basil and Watermelon and Strawberry Salad with Chile Vinaigrette.
Make Watermelon-Tomato Gazpacho or watermelon soup by puréeing with honey and lime juice. Garnish with sour cream or Greek yogurt and blueberries or blackberries.
Make watermelon salsa with plums or peaches, tomatoes, cilantro and lemon or lime juice. Serve with grilled meats, tofu or tempeh. Try Halibut with Watermelon Salsa or Black Bean, Corn and Watermelon Salsa.
Add cubed watermelon to yogurt or cottage cheese.
Eat watermelon with shrimp or crab salad. Shrimp, Watermelon and Goat Cheese Salad is simple to make and perfect for grilling.
Dip sticks of watermelon into cream cheese dip.
Serve watermelon for dessert on its own or in a fruit salad. Or, cube and serve with ice cream, frozen yogurt or non-dairy dessert.
