My kids eat breakfast during the school week at 6:45 AM. Though we all tend to wake up early, actually being functional at this time is another story. That means choosing what to have for breakfast can be a bit of a challenge. I’m constantly greeted with a chorus of “I don’t know”, so I do what I can to minimize the sleepy (and perhaps grumpy) frustrations.
That means taking care of breakfast ahead of time. I like to use my slow cooker for all sorts of things, including breakfast. It’s a great way to have a hearty, warm breakfast ready when everyone wakes up — not just the kids.
Or, bake up a casserole-style breakfast the night before and simply reheat individual portions when each eater has made their way to the table. Egg or oatmeal based casseroles work particularly well!
