Okay, I’ll admit, that this recipe is one of my favorites from last year, but it’s simplicity can’t be beat! Mashed potatoes are usually left to be made right before dinner, which can lead to undue stress and a gummy side dish. I love this recipe because duchess potatoes are like fancy, individual servings of mashed potatoes that can be made ahead really easily. Also, because of the addition of egg yolks and extra baking time, the potatoes have a crisp golden crust that’s irresistible.
