Tabbouleh is one of my favorite dishes, especially when the weather starts to get warmer. It’s extra refreshing thanks to the abundance of fresh herbs and lemon juice. I especially love this no-cook version of the dish made gluten-free by the clever use of hemp seeds, so you’re getting a nice boost of protein, too. Raw hemp seeds have such a great texture that you won’t even miss the traditional use of bulgur. This recipe is going to be on my summer desk lunch rotation for sure!
