It’s cherry season! Unlike some of my other favorite fruits (apples and raspberries, for example), stone fruit isn’t available year-round. I love cherries so much, I can usually only bear to eat them raw, so this new five-ingredient Raw Cherry Pie is my new favorite way to dress them up a bit. You make a simple and delicious crust using dried apricots and sliced almonds, then pile the raw cherries (tossed with a bit of honey to make them shiny and add a little more of a filling-like texture to the mix) on top. The pie itself is gorgeous, but be prepared to scoop “slices” out or just reassemble the pieces as you cut and serve.
