When the temperature drops enough so that I am once again pumped to turn on my oven, one of my first moves is to make something with winter squash. Spaghetti squash is particularly cool because its texture is so wildly different from any other squash. This squash also happens to be featured in one of my favorite new recipes for fall — Roasted Spaghetti Squash with Almond Curry.
The juice from the canned tomatoes combines with almond butter and curry powder to make a really rich and delicious sauce. Then everything is layered back into the shells of the squash, curry sauce, tomatoes, greens and strands of spaghetti squash. It's like a fancy gluten-free casserole and it is so, so pretty.
