In the South, sweet potatoes are all over the place this time of year, so I’m always baking a bunch during the weekend to use for lunches and dinners throughout the week.
Who knew you could do sweet potato for breakfast though? In a smoothie?! It’s so cool! Using coconut milk (not the canned kind, but the kind that hangs out with almondmilk) is a delicious way to make this smoothie extra creamy.
In general, fall is a nice time to give your smoothie rotation a bit of a reboot. I definitely lean on berries during the summer, but like to start adding grains (like rolled oats) and more unusual-for-a-smoothie fruits (such as apples and pears) when I get the first whiff of cooler weather.
