It’s actually not a new thing. Pioneers made “buckboard” or “homesteader” bacon using cuts other than the belly as a way to use every part of the animal. Now this delicious, new-to-you form of bacon from Wellshire is available in Whole Foods Market stores in the US and Canada.
Even though it has 45% less fat than traditional bacon, pork shoulder bacon looks, smells, and cooks up crispy and meaty, just like traditional bacon. Like all the bacon we sell, Wellshire Pork Shoulder Square Cut Uncured Bacon comes from pigs raised without antibiotics or added growth hormones**. Our meat standards prohibit animal byproducts in feed, as well as artificial preservatives and synthetic nitrates or nitrites.
**While federal regulations prohibit the use of hormones in raising pigs, our standards don’t allow them in any meat production.
