I’ll admit to being on a bit of a fish kick lately. Fish has major advantages this time of year, because it cooks quickly and easily. Tilapia is really mild and versatile, so it acts as a great family-meal standby. I also super love that our Responsibly Farmed Tilapia is raised with no preservatives or added growth hormones and it’s traceable from the farm to your cart. Here are a few of my favorite new ways to cook with it:

I am down with crispy breaded fish always, and I especially like that this version bakes in the oven—hands free and without the mess of frying.

Give the grill a last spin before colder weather descends and feel secretly fancy while you do it. Tilapia is perfect for a technique like this where the packet protects the fish on the grill and acts as an easy serving vessel.

More things should have fennel! It’s such an underused vegetable that sweet and crunchy and so good with the mild flavor of tilapia. This recipe goes straight to the top of my priority list because it cooks all in one skillet, too.
