When I think of comfort food, there’s not much else that embodies it more for me than a warm, hearty casserole.

When I think of comfort food, there’s not much else that embodies it more for me than a warm, hearty casserole.

Not only are they perfect when the weather is chilly, they are ideal dishes for potlucks, make-ahead meals, and ensuring you have leftovers for yummy lunches.

For me casseroles mean any dish baked in a casserole pan, from pot pies and pasta dishes to gratins and even breakfasts!

While  classic casseroles are great, they  don’t always have to be filled with meat, cheese, or cream-based sauces — there are plenty of delicious recipes for those who follow special diets, from vegan to gluten free and in between.
