When it comes to potlucks and other summer gatherings, I tend to gravitate toward the salads. Sure, whatever’s on the grill might be the main attraction, but filling my plate with leafy green-, grain- and fruit-based salads means I won’t be experiencing potluck regret later on. (You know, when you just can’t bear to not have another bratwurst and end up with a bellyache.)
If you’re making salads for summer gatherings, take care to keep them well-chilled or avoid dairy-based dressings altogether. For salads that have more delicate ingredients, such as arugula or soft fruits, consider keeping the dressing separate to avoid wilting or a mushy mess. Food safety is important, especially when temperatures are hot, so remove leftovers promptly after everyone grabs a plate.
