But it’s what happens after harvest that truly makes this holiday favorite a party winner: The salmon is seasoned and smoked using specially crafted smoking methods — and after being salted and seasoned, it’s then gently cured under controlled humidity and temperature conditions.
A slow cold-smoked process (82°F) over a fire of locally sourced beechwood helps finish it out with a delicate flavor and texture. After that, it’s ready to enjoy as a party appetizer or paired with goat cheese and bagels for the best breakfast spread ever.
