Whole Foods Market’s Latest Obsession: Pupusas

Our food truck test kitchen enjoyed a delicious kickoff in Austin, Texas in March with Tartinette, an open-faced sandwich concept. The truck is now enjoying its second theme — pupusas!

The team at Whole Foods Market includes an abundance of recipe developers and talented chefs. So much so that we had to create a whole new outlet to share these fresh ideas and delicious concepts. This first-ever food truck test kitchen opens in a new tab enjoyed a delicious kickoff in Austin, Texas this March with Tartinette, an open-faced sandwich concept. The truck is now enjoying its second theme — pupusas! 

Dina’s Pupuseria is inspired by an Austin Whole Foods Market Team Member, Dina Santos. The Guatemalan native discovered pupusas while living there and visiting El Salvador and Honduras. When she joined the Whole Foods Market catering team, she enjoyed bringing homemade pupusas to share with Team Members. She and the team have been experimenting with them ever since and are delighted to share variations on the dish through the food truck.

What are Pupusas?

This South American flatbread is made with corn masa and filled with a blend of cheeses, often including queso fresco and jack cheese. Some highlights on the menu include:

  • Dina’s Especiales starring squash blossoms,

  • Slow-Smoked Brisket pupusa with honey-grilled pineapple salsa and red onions,

  • Carne Mechada, which is Venezuelan-style slow-cooked shredded beef with pickled beets, radishes and carrots, garnished with cilantro.

Vegans can also enjoy the fun with Cauliflower Escabeche filled with non-dairy chive almond milk cheese and topped with jicama, carrots, pickled cauliflower and preserved lemons. Don’t forget the churros! Find the full menu here opens in a new tab.  

I recently asked Dina what she thought about her recipe inspiring the food truck theme. She said, “I’m very happy and proud that such a simple recipe that I learned at a young age and that I make regularly for my family and friends is being made into such a big deal. It’s given me confidence.” And when asked what she loves about pupusas, she said “The masa! It is a flavor from my childhood and it reminds me of my family.”
