The holiday season can be quite a handful with kids, so get those little hands busy helping out with the cooking! Getting kids involved in the kitchen is a great way to teach about healthy eating.This simple raw cookie recipe is hands-on fun for kids, and the whole family will enjoy a tasty dessert made with whole, unprocessed foods and unrefined natural sweeteners.
2 cups pecans
1 cup unsweetened coconut flakes, divided
1/2 cup prepared date paste*
8 pitted and chopped dates
1 teaspoon vanilla
1 tablespoon coconut manna or tahini
1 teaspoon cinnamon
1/2 cup raisins
Place the pecans and half the coconut flakes into a food processor and process until the mixture it resembles sandy flour. Add the date paste, chopped dates, vanilla, manna (or tahini), and cinnamon. Pulse until the batter sticks together. Transfer the batter to a large bowl and mix in the raisins.
Set up a clean table for the kids and divide the batter into bowls for them. Set up another bowl with the remaining coconut flakes.
Have the kids tear off batter pieces by hand and roll them into balls half the size of a golf ball. Then, roll the batter balls in the coconut flakes.
All done! You can eat these cookies right away or refrigerate until serving. They even freeze well for future play dates.
*To make Date Paste: Soak 1 cup of pitted dates in 1 cup of water for 1 hour. Place dates and half the water into a blender or food processor and blend to a paste. Add more water little by little if paste is too thick.
