It’s time to take our relationship with Japanese food to the next level. We’ve been through a lot together, (an Instagram search for #sushi pulls more than 16 million posts). Parents have been swept up in the craze for kyaraben lunches, bento boxes with foods arranged into cute shapes like animals and cartoon characters. Now, matcha lattes have taken over mornings, and Eater has just named chawanmushi — savory egg custard made with fish stock called dashi — a “dining trend that will define 2017.” It’s clear we’re ready to take an even deeper look into Japanese cuisine.

Nutritional yeast — sometimes called Nooch — is now one of the most used ingredients in my (vegan) kitchen. I think of it as a magical ingredient because it’s as at home subbing in for chicken broth as it is cheese. In fact I always keep a jar of it right on my kitchen counter so that I can add a little whenever I need a savory flavor boost. But it’s not just for vegans or vegetarians — nutritional yeast works in any soup or stew, and is wonderful on popcorn too!

Luckily, solving the lionfish problem has a delicious solution! Since the Monterey Bay Aquarium rated lionfish Green in early 2016, Whole Foods Market is now able to offer lionfish in our stores, creating a market for this tasty predator and hopefully making a dent in the growing population.

Teff is one of the oldest cultivated grains in the world, originating in Ethiopia as plant domestication began thousands of years ago. It is a grass, not a variant of wheat, and is very similar to millet or quinoa, but this seed is even smaller. The small size makes it ideal to use in porridges and savory polenta-style meals. It’s also ground into flour and used traditionally for flatbreads like injera. Teff is high in protein, carbohydrates, and fiber, which has made it a staple for seminomadic farmers for centuries.
