I like to purchase a ready made plain flatbread..sprinkle with some feta or goat cheese...then add prosciutto and some fresh pineapple....bake at 375 for 5 to 7 minutes......delish!

Summer Cooler 1 Whole Foods Pineapple (cored) and left in tact 1 quart Whole Foods Strawberries (washed and minced mixed with sugar and refrigerated for several hrs. until liquefied) 1/2 Whole Foods banana ice cubes Orange juice Vodka (optional) In a blender fill 3/4 with ice cubes. Add 3/4 cup liquid strawberries, about 1/4 of the pineapple meat, 1/2 banana and 1/4 cup OJ. (can use vodka in place of the OJ). Blend well so that there are no ice chunks and mixture is smooth. If not blending well, add more OJ or Vodka. When blending is finished pour mixture into the cored out Whole Foods pineapple. Add a slice of pineapple over the edge of pineapple as a garnish, add a straw and you're all set for your fruit summer cooler.

Baked Beans and Pineapple So many compliments on this dish. People think I baked it for hours. Although fresh pineapple is not used you must try it. Delicious and sooo easy. Use you favorite canned baked beans(or bake your own) and add crushed pineapple.(I use Dole) Depending on the number of people: 1-2 cans beans 2-4 TB crushed pineapple OR to taste Must use crushed because of the juice. Enjoy!

I love grilled pineapple over frozen yogurt with a fresh sprig of mint. What could be more delicious and refreshing? Sometimes i top it with slivered almonds. Yum!

Pineapple Raita Indian Style Put some water in low fat yoghurt. Blend them together, Add chunks of Pineapple to it with 2 tsp of cumin powder, a pinch of salt and black pepper.Pineapple Raita is ready to eat with any kind of rice or bread! You can add some green chillies for a spicy taste also.

Grilled pineapple with goat cheese Cut slices of fresh pineapple horizontally. Brush each round slice lightly with olive oil (or your preferred oil) and place on the grill. Turn each slice once it begins to brown. Continue grilling the other side until brown. Remove from the grill. Place crumbled goat cheese(feta or blue cheese also work well) on top of each slice. Drizzle with balsamic vinegar and serve. Yum!

The following recipe uses more than 6 ingredients but thought you might be interested: These were made BEFORE I made dinner – that’s how quick and easy they are. 2/3 cup all purpose flour 1/2 cup quick cooking oats 1 1/2 tsp baking powder 1/4 tsp salt 1 TBS Turbinado sugar 2/3 cup low fat milk 1 egg 1/4 cup canola oil 1 tsp vanilla 3/4 cup chopped fresh pineapple In a bowl, mix all the dry ingredients together then make a well in the center. Beat the egg with the milk and vanilla then add the oil. Add the egg mixture to the well in the dry ingredients. Mix well. Add pineapple. Heat your waffle maker and spray with non-stick. Add batter and cook about 6 – 7 minutes.

I love Panini's. Cut loaf of ciabatta bread in half. Spread cream cheese mix(8 ounce package reduced-fat cream cheese, softened, 8oz container fat-free plain yogurt,1/2 cup crushed pineapple, drained well)on both halves of loaf. Top with enough Pancetta to cover and 1 cup baby arugul. Top with 1/2 ciabatta loaf and grill on panini press.

I use fresh pineapple in my green smoothies! To a blender, add 1-2 cups of fresh orange juice, add 1 cup of fresh pineapple, 1 medium cucumber, and about 2 cups of any mild greens like mache, romaine, or baby spinach. Blend well and enjoy!

1 fresh pineapple cut into 8 rings 4 whole wheat english muffins, split in half 8 slices mozzarella cheese 8 slices canadian bacon 1/2 cup prepared spaghetti sauce or pizza sauce Preheat broiler. Lay english muffin halfs on a large baking sheet. Spread each half with about 2 tbsp of the sauce. Stack each with canadian bacon, then cheese. Top with pineapple ring. Place in oven 4 inches under broiler and broil until cheese melts and pineapple has browned.

Spicy Soba Noodles with Red Bell Pepper, Tofu, and Pineapple 1 package soba noodles (6 servings) 1/2 fresh pineapple 3 fresh red bell peppers 1 package fresh firm tofu, pressed to remove extra water 1 yellow onion 1 clove garlic 3 Tbsp hot sesame chili oil 2 Tbsp sesame oil 1-2 Tbsp mild oil, such as canola, peanut, etc Clean and chop the tofu, pineapple, onion and red bell pepper into bite-sized cubes. Reserve as much pineapple juice as possible. Mince or slice the garlic. Set each aside in its own bowl. Cook 1 package of soba noodles (6 servings) according to the directions on the package (Boil water, add soba, return to boil, remove from heat, wait 4-6 minutes, drain, rinse with cool water.) While the water is boiling and the noodles are cooking, heat the oils in a wok or saute pan. Saute the onions and garlic until soft and starting to color, then add the bell peppers, cook 1 minute, and add the pineapple and pineapple juice, cooking 2 more minutes, until everything is hot and the peppers are softened. Serve the stir fry over the soba noodles, with a generous spoonful of the spicy sauce.

Mojito Fruit Salad 1 fresh pineapple, chopped into bite sized chunks 1 lb strawberries, chopped into bite sized chunks 2 medium apples, cored and chopped into bite sized chunks 1 cup red grapes, cut into halves Juice of one key lime 2 tsp fresh mint, chopped. Combine all ingredients and mix well.

Sweet treat. Soak Sushi rice for 30 min. in water, drain. I normally follow directions on the bag for liquid amounts. I also use a steamer with the rice pan inside. Combine rice, water, fresh pineapple (I use canned in off season syrup & all), when using fresh pineapple you may need a packet of sugar to sweeten to taste. Turn steamer setting to 30 min, after bell dings, let sit for 10 min. Warning...it will be sticky, but you will be able to eat with hands. Scoup out into a bowl & enjoy a sweet low calorie treat. Goes great with kabobs that have veggies & shrimp or a jerk pork & veggies.

Pineapple Dip 1 ripe whole pineapple - slice lengthwise leaving green tops 1 jar Major Greys Mango Chutney 1 block cream cheese Toasted slivered almonds WASA crackers Scoop out pineapple to form boats to refill with dip (the 2 halves can be displayed on a large platter). Run pineapple through food processor to chop, add chutney and cream cheese - blend well. Refill pineapple shells with dip mixture. Sprinkle top with slivered almonds. Very nice to bring to a party - serve with WASA or other stiff cracker.

Hot Curried Fruit Salad Fresh Pineapple (Chunks) Fresh Peaches (Chunks) Fresh Pears (Chunks) Butter, Brown Sugar, Curry Powder Combine 1 stick of butter, 1 cup of brown sugar, 1 Teaspoon of Curry Powder-mix together and melt over heat. Ingredients: 1 Whole Trade Pineapple cut into bite size chunks 4 Chicken Breasts cut into bite size chunks 2 cups Flour, seasoned to taste 1 Egg (or Egg Whites), beaten Extra Virgin Olive Oil Brown Rice Step 1: Prepare four servings of rice. Set Aside. Step 2: Coat the chicken in the egg, then the flour (like fried chicken) Step 3: Heat oil in pan and brown the meat until fully cooked and brown on all sides. Step 4: Add pineapple, sauté until pineapple is warm and soft-but still firm. Step 5: Put chicken pineapple mixture over rice and serve. This is a delicious and healthy meal that feels like your being bad but is sooo good!

Vegetarian Hawaiian Tortilla Pizzas - quick, easy, and super tasty! Ingredients: Flour Tortillas Olive Oil Pizza Sauce Vegetarian Canadian Bacon Grated Cheese (3 parts mozzarella, 1 part sharp cheddar) Fresh Pineapple Chunks Directions: Preheat oven to 350. Use a fork to poke air holes in one side of the tortillas. Rub a little olive oil on this side. Bake tortillas on the rack in the oven (oil side up) until they are crisp and have puffed up a little (5-10 minutes). Remove tortillas from oven. Place on a cookie sheet and spread with pizza sauce. Top with Canadian bacon and then cheese (putting the Canadian bacon under the cheese helps it stay moist). Finish with pineapple chunks on top. Increase oven temperature to 425. Bake pizzas until cheese is melted and bubbly (15-20 minutes).

Slice pineapple very thin. Coat with light oil and a thin wash of brown sugar. In fry pan, cook slices on both sides for two minutes. Place on rack to keep warm. Quickly heat in same pan, several thin slices of pancetta. Do not fry to crisp. Prepare dish...your favorite salad greens on plate with seasoning...stack pineapple and pancetta interleafing...stack three or four pineapples high. Serve with side of aoile.

I love using fresh pineapple in a fruit platter for parties. The one twist I do is the following: Slice the top off the pineapple so the greenery can be used as decoration. Use a pineapple slicer/corer so fresh pineapple can be used on the fruit platter. Create fruit dip using 8 oz. cream cheese, 1/2 cp marshmallow creme, and 2 cups whipped topping. Use the cored pineapple to hold the fruit dip and set the top of the pineapple next to it for decoration. With the dip inside the pineapple, it adds the pineapple flavor to the dip. Simple - quick - and tons of compliments!

Grilled Pineapple with Honey This is my favorite summer dessert when the grill is fired up, and it's super simple. You need: 1 fresh pineapple honey a grill Cut the top and bottom off the pineapple, then cut the skin off the sides. Cut the long way into quarters to make 4 long wedges, then cut the core section out of each wedge. This should leave you with 4 long, wide, flat pieces. Put the pineapple pieces on a preheated grill for 5-10 minutes, until they are hot and have a few grill marks on them. You can turn them partway through if you like more char lines. Remove the pineapple pieces to a cutting board and chop into bite-sized chunks. Put into a bowl and toss with honey to taste, or let everyone drizzle honey over their own serving.

Pineapple cheesecake bars You will need: 9 x 9 inch baking pan Ingrdients Dough ½ cup 1 stick butter 4 tbsp. sugar 1 egg 1 cup all purpose flour ½ tsp. baking powder 1 small can (8oz) crushed pineapple filling 1 8 oz cream cheese ½ cup sugar 2 eggs 2 tbsp all purpose flour 1 ½ cups milk 1tsp. vanilla 2 tbsp. lemon juice ½ tsp. cinnamon 1.in a large bowl with a hand mixer, beat butter, sugar and egg until creamy, slowly sift flour and baking powder to the egg mixture and mix until dough becomes like pie dough. Spread on a baking pan. Spread crushed pineapple on dough. 2.beat cream cheese, sugar and eggs together in another bowl, slowly add flour, then add milk, vanilla, and lemon juice. Beat until smooth pour over dough and pineapple mixture. Sprinkle with cinnamon. Bake for 1 hour at 350 degrees. 3.let cool and cut into squares and enjoy! 4.tip: this recipe has been tested by baking the pie crust first at 350 degrees for 10 minutes and let cool before pouring the filling on top of crust and pineapple, I adapted the recipe that way, it will be perfectly golden crust

I enjoy this for breakfast in the summers. If the fruit you use is quite ripe, it should be sweet enough as is, but feel free to sweeten to taste ... Mango Colada - serves 2 1/2 cup fresh pineapple chunks 1-1/2 cups cubed frozen mango 1 cup coconut milk beverage (So Delicious) or light coconut milk 2 Tablespoons shredded coconut (I use unsweetened) Sweetener is optional (taste test and add some agave, sugar, or other sweetener of choice if needed, to taste) Blend it up. If it is too thick for your liking, add in some more water or coconut beverage / light coconut milk. Option: You can also add some fresh pineapple juice for some of the liquid.

(great with jerked pork/chicken or any caribbean dish, keeps a couple of weeks in the fridge) Pineapple chutney 1 big ripe pineapple, cut into small cubes. Cut the pieces into pieces about the size of a kidney bean. 1 tablespoon of fresh ginger peeled and finely minced. 1 tsp of allspice, freshly ground if possible About ½ cup of white vinegar (to taste, according to how tart the pineapple) About ½ cup of white sugar (to taste, according to how sweet the pineapple) 1 medium onion, chopped very thinly Combine all the ingredients in heavy skillet, and bring to a gentle simmer. Let the mixture cook away until it is no longer watery, but thickened. Serve at room temperature, also the liquid will thicken further from the consistency that it is while hot, so you can take it off the heat a little before it's perfect. May add salt to taste and raisins or even avocados to garnish.

PINEAPPLE CHEESE SQUARES Pat in Pan Crust: 1/2 C Flour 2/3 C Soft butter 1/2 C Nuts (your choice - Macadamia are wonderful!) 1/2 C Maple Syrup Middle Layer: 2 - 8 oz Pkg softened Cream Cheese 2 Eggs 2/3 C Pineapple juice Top layer: 1/4 C Flour 1/4 C Maple Syrup 20 oz Pineapple (crushed in food processor-drained-save liquid) 1/2 C Whipping cream Pat in crust: Mix all ingredients together. Press firmly into 13 X 9 pan. Bake at 350 til set 15-20 min. MIddle layer: Beat cream cheese until smooth & fluffy. Beat in eggs. Stir in 2/3C pineapple juice. Pour mixture over hot crust. Bake at 350 til center is set - about 20 min. Cool completely Top layer: Mix flour and Maple Syrup in saucepan. Stir in 1C reserved liquid from crushing pineapple. Boil 1 min. Fold in pineapple. Cool. Beat whipping cream. Fold into pineapple mixture. Spread carefully over middle layer. Refrigerate 4hrs. Cut into squares.

My favorite is a dessert, of course! 4, 1-inch pineapple slices 1 pint vanilla ice cream 1/4 cup brown sugar 1/2 cup coconut milk 1/4 cup fudge sauce Grill 4 1-inch thick slices of pineapple on both sides, sprinkling brown sugar on top of the second side to caramelize. Move to 4 dessert dishes. Scoop on each 1 scoop of vanilla ice cream. Pour on top 2 tablespoons coconut milk and 1 tablespoon fudge sauce

This simple appetizer has been in my family since I can remember and it's always a hit, even with kids who dare! -Chunks of pineapple -Chunks of pepper jack cheese -Toothpicks Poke a toothpick in the pineapple first and then the cheese and stand it aside. To make it a day ahead just keep the pineapple and cheese cut into cubes refrigerated separately. Put it together the day you'd like to serve that way the cheese won't get soggy with pineapple juice. West Coast Burger 1 Beef Burger 2 pineapple pieces cut into rings 1/4 avocado cut into slices 2 strips of applewood bacon Grilled Red Onion BBQ sauce Grill burger to liking between medium rare and medium. Pan-fry bacon until crisp flipping periodically. Grill red onion rings. Grill bun. Put burger on bun. On top of that, put pineapple rings. On top of that: avocado slices. On top of that: the bacon. And add grilled red onions and BBQ sauce to taste.

I made this last night with tofu stirfry. Pineapple Salad 1/2 fresh Pineapple cut into chunks 1 english cucumber 1/2 red and 1/2 orange pepper 4 stalks of celery 1 large avocado Chop all ingredience into small bite sized pieces Dressing- 1 lime, juiced 1 TBS agave necter 1/2 TBS finely minced fresh ginger 1/2 garlic clove finely minced Salt and Pepper to taste Whisk in a small bowl, pour over salad, toss and enjoy! Ok that's more than 6 ingredients, but it was so cool and fresh, my husband was unsure of how it would turn out but he loved it!

Pineapple/Watermelon Smoothie 3 cups chilled sliced watermelon 2 cups chilled sliced pineapple 1. Slice watermelon and remove seeds 2. Slice pineapple 3. Place both in blender on high for 30-40 seconds (or until completely blended) Only two ingredients and so natural, healthy, and delicious. Enjoy : )

Grilled chicken Pineapple Sandwiches -- Delicious!! For each sandwich, start with a piece of bread. Spread butter on it and place butter-side down on electric grill. Place thin slices of grilled chicken on top, then slice or two of pineapple. Sprinkle with shredded mozzarella cheese. Then top with another piece of bread. Butter top of bread. Grill on electric grill at 325 degrees until golden brown on both sides.

Coconut Pineapple Frosting: 2 spears fresh pineapple finely chopped 6 oz mascarpone cheese 1/2 cup powdered sugar 1/2 tsp coconut extract We used the frosting on gluten free coconut cupcakes that we made from a variation of GF vanilla cake mix. After generously frosting the cupcakes, we dipped them in toasted coconut flakes (nest) and then added jelly beans (eggs) to make spring nests. They were cute and delicious and they're all gone already. We gave half away so we wouldn't eat all of them.

Spicy Pineapple Spinach over Quinoa 3 cups pineapple, diced 5 cups fresh spinach 1/4 cup red onion diced 1 1/2 cups cooked Quinoa 2oz feta crumbles 1 1/2 teaspoon cayenne pepper Mix cayenne pepper with the diced pineapple. Sautee pineapple until warm, add spinach. Sautee spinach until cooked down, add red onion. Add pineapple spinach mixture to cooked quinoa, top with feta. Salt to taste.
