Can you recommend some good ' gluten-free baking flour' for this recipe. I have seen some banana bread recipes with different types of alternative flours and some suggesting a blend.....as a newbie, I'd love to hear other people's suggestions on how different type of flours taste in the bread and how they cook etc. Thanks for the recipe...this looks sooo yummy!

I agree with the other reviews; this is a fabulous recipe! I made a few tweaks based on the helpful comments: 1. I didn't add applesauce (mainly bc I didn't have any at home) 2. I used 1 cup Bob's Red Mill GF flour (yes, the "bean" version which is all I had) + 1/4 cup coconut flour instead of 2 full cups GF flour 3. I used 1/4 cup coconut palm sugar + 1/2 cup organic sucanat (overall reduction of 1/4 cup sugar) 4. Based on other reviews, I used 3 full eggs 5. I subbed solid coconut oil for olive oil 6. I added 1tsp baking powder 7. I reduced cooking time to about 40 min. 8. I baked in a 9" x 5" pan. It is delicious. It results in a more dense banana bread/cake which I prefer.
