Healthy Brunch Recipes Every Bunny Will Love

When my girls were young some neighborhood friends celebrated spring with open doors, flocks of children hunting for eggs hidden among the tulips and a fabulous potluck brunch.

Sounds lovely! Because to me, nothing heralds the return of warmer days like plates filled with favorite breakfast foods eaten in a garden filled with blossoms and blooms on a sunny weekend morning.

I like to make sure that, (not-so-hidden) among the chocolate bunnies and rich foods on my festive table, there plenty of delicious options that don’t include added refined oils or refined sugars.

Here are some of my favorite ways to lighten up brunch.

Carrots They’re not just for bunnies! Carrots are a great addition to an Easter menu. Get creative and put them in unexpected dishes like Carrot Cashew Spread. If I’m ever lucky enough to find pale gold, maroon, and even purple carrots I love to include these beauties on a crudité platter.

This versatile root vegetable can even show up in desserts, like Carrot Walnut Cookies.

In fact, I’d consider them healthy enough for breakfast. Or make some Carrot Dressing and add an earthy sweetness to your salad.

Greens Want some more rabbit food?

Spring greens are perfect. Spring Salad with Strawberries and Creamy Orange Avocado Dressing adds some seasonal color (and nutrients!) to your table, while Grass Fed Steak with Spring Greens is a crowd-pleasing entrée salad.

Treats Keep the Easter theme going with egg-shaped treats! Both the Lemon Treats and the Cocoa-Oat Truffles are so quick to make, and can easily be rolled into cute ovals, reminiscent of the celebrated egg.

The Classic If I’m ever in doubt as to what’ll keep my holiday-brunch crowd happy, I usually turn to a breakfast classic; with a healthy spin, of course. Whole Wheat Blueberry Pancakes are delightfully good.

Make a big batch you you’ll (hopefully) have leftovers to freeze for another day. In fact, one my children’s all-time favorite “sandwiches” are reheated blueberry pancakes spread with a thin layer of nut butter.
