I really appreciate that you put these kinds of articles on your website. I am notorious for being a veggie-hater and really struggle making veggies for my family. But this article inspires me. Maybe one day I'll be a veggie lover...it can happen, right?

I just tried the carrot ribbon idea.I took one large carrot, sprayed a pan lightly with canola oil and sauteed for about one minute with bragg liquid aminos, pepper, and onion power. Hits the spot for a salty snack without all the calories.

Shred, blend(in a food processor)or juice carrots in with mac and cheese (home-made or organic boxed). Picky eaters can stretch our imagination on food preparation to create healthy and fun dishes to enjoy!

Shredded carrots are added to my meals that use ground meat. Ex: meat loaf, sloppy joes, chili, meat/bean dip. To keep from cooking out all their goodness, I cook the meat 'till almost done and then add the carrots. Be sure to go for a short shred if you're trying to hide the carrot.
