My favorite gluten free, high protein pantry meal is quinoa pilaf. I have some simmering right now! I threw in 3 garlic cloves, half a lemon's zest, and a handful of chopped fresh parsley. For an extra satisfying dinner I will toss with some canned organic chickpeas and drizzle with oil.

I love it when healthy and snack are mentioned in the same sentence. Some of those snacks will be awesome for fueling up during a bike ride or when backpacking. Oh PLEASE Let Me Win!

My favorite summertime pantry dinner is strawberry mac nut salad. The macadamia nuts and strawberry balsamic are from my pantry, the spinach and strawberries are from my local farmer's market, and the goat cheese is local if I can get it. Yum! This time of year, I tend to avoid the pantry and go as fresh as I can. Plump red tomatoes, lovely cucumbers, a drizzle of vinaigrette, some kalamatas (from WFs) and French feta, and there's another quick 'n easy summer dinner!

We make a lovely tray to bring out to the pool. We mix one part WFM jalapeno to three part regular basil pesto from the olive bar. Then we get some chopped olive and mix with some tepanade. We add processed toasted almonds and a little hard cheese to that. Another fav is sun dried tomatoes w/ olive oil nuts and cheese and garlic- some fresh spinich in it- maybe some agave to cut the bitterness. Then assorted Manchago- port de salut and Beemster cheese- I love a Brie with fresh thyme and minced garlic. We slice a baguette, put out some apple and carrots, and it's just magical!

Food Should Taste Good multigrain chips with homemade dip...I use a cheese grater to grate cucumbers and a clove of garlic, and mix this into organic sour cream....add a little salt and pepper and its amazing!

When it's hot...like it is now...I like to have cold snacks on hand. Because chicken egg salad is a favorite, I chop all of the ingredients into small tidbits so that you get a little bit of everything in every bite. Then I slice burp-less cukes and add a scoop of the chicken egg salad to each cucumber medallion. The results is both delicious and refreshing!

Nothing beets quick summer pasta of Rigatoni cooked Al Dante, mixed with pure virgin olive oil, a can of white kidney beans, a tin of anchovies (use the oil!), a few spoons of capers, and a good twist of fresh ground pepper. Light, flavorful, salty deliciousness. Add some fresh herbs if you have them, or a diced fresh tomato for extra goodness!

We LOVE to make trail mix to have on hand. From cereal to dried fruit to chocolate, it's a great go-to snack!

We always have nuts available in the pantry. They make a great quick snack when the kids come running past between playing inside and outside saying "I'm HUNGRY!" We also pack up snacks when we go out for the day, including dried fruit and nuts (that we always mix up ourselves) or apples and peanut butter, another favorite snack-to-go.

Jan says …

I'd take a combination of the nuts and fruits, add Greek yogurt and Coconut Water and have a wonderful smoothie!

Patricia D. says …

My favorite pantry-based summer meal is pita chips with homemade hummus! I always have a can or two of garbanzo beans around and along with a bit of olive oil, salt, and pepper -- I've got myself some homemade hummus dip! :)

Judy Y says …

My favorite quick go-to summer snack is a tartine (using crackers or bread) with any nut butter spread sprinkled with dried fruit bits and drizzled with chocolate syrup. Quick pantry summer bite would be tuna pasta with olives, balsamic vinegrette and herb de provence.

I recently discovered the blessing of pantry-only meals as it's been in the mid-100's for the past two weeks and too hot to even think about turning on the stove. My favorite combo is canned tuna, sun-dried tomatoes, cannellini beans and rosemary with a dressing of red wine vinegar, olive oil and lemon juice. (When the weather cools off, adding whole roasted garlic is a tasty option served on pita bread). What I love most is that all of these items are available in Whole Foods' 365 brand, so keeping my pantry stocked with healthier options is economical too!

During a summer I always want to eat salad as my dinner. Using fresh, crisp and beautiful local organic veggies with my mom's dressing recipe. For a dessert? Chilled juicy sweet watermelon with light sprinkle of salt! Just like an old times in my grandma's home.

.I add all different nuts &/or seeds to my veggie stir fry & salads - this creates many different combo's of quick dinners - esp since fresh local kale, swiss chard & tons of other veggies can go in both the stir fry & salads. as far as a snack while doing serious hiking - nothing beats the coconut water and nuts & dried fruit!
