In a medium bowl, combine feta, olives, onion, oregano, salt and pepper. Add lamb and, with your hands or two forks, lightly bring all the ingredients together, taking care not to overwork the mixture. Form into 6 patties of even thickness. Transfer to a lined baking sheet, cover loosely with plastic wrap and refrigerate for 30 minutes.
Meanwhile, prepare a grill for medium heat cooking or preheat the broiler. Cook the burgers, flipping once, until cooked to your desired doneness, about 5 minutes per side for medium.
