1 (6-ounce) can water-packed chunk light tongol tuna, drained
1/2 cup low-fat cottage cheese
3 tablespoons sliced almonds, toasted
3 tablespoons seedless raisins
1/2 carrot, grated
4 leaves green leaf lettuce
8 slices whole wheat bread, toasted if desired
In a small bowl, toss together tuna, cottage cheese, almonds, raisins and carrot until well combined. Layer tuna salad and lettuce between slices of bread and serve immediately or wrap tightly and refrigerate until ready to eat.
