Ingredient Spotlight: Cooking and Baking with Ginger
Wednesday, March 18th
6:00 PM - 8:00 PM
Cooking Classroom, $30 per person

This class will be taught by Chef Ani. Ginger has got to get the award for the most deceiving appearance among rhizomes. Looking remarkably drab in the “hands” it is sold in, covered with dull brown skin, you’d never guess that beneath that skin lies a culinary powerhouse. Ginger has a strong, spicy, floral flavor that can quickly dominate a dish, but for us ginger lovers, there is never enough of that pungent kick. There are many ways to enjoy ginger- fresh, dried, pickled and candied, as well as a plethora of things to do with ginger ale. In this class, we’ll use ginger in every form, show you the best ways to store, peel, chop and grate fresh ginger, provide you with recipes for drying, pickling and candying it, and infuse it into many different sweet and savory dishes. This class has vegetarian options upon request and hands on opportunities as desired. Pre-registration is required. On the menu:

  • Ginger Citrus Sparkler

  • Ginger Pork Potstickers with Ginger Soy Dipping Sauce

  • Butternut Squash Ginger Soup with Ginger Mint Pesto

  • Ginger Ale Kale

  • Ginger Seared Scallops with Ginger Butter

  • Triple Ginger Gingersnaps

Family Meals, Restaurant Style
Thursday, March 19th
6:00 PM - 9:00 PM
Cooking Classroom, $30 per person

This class will be taught by Chef Jeremy. Family meal not only refers to any meal eaten together as a family, but also the meal consumed by the staff of a restaurant right before a shift. Some of the most hearty and heartwarming meals ever consumed are made from thrown together ingredients that the chefs provide to the staff to give the employees the energy to get through a busy restaurant shift and to enjoy a moment of quiet solace with coworkers before the hustle and bustle of day to day shift work at the restaurant begins, the same way that you might eat with your family. Rooted in this tradition, Chef Jeremy will bring you some of his favorite family meal offerings from his own past restaurant experience that will allow you to continue this tradition of dining as a social experience in your own home! Pre-registration is required.

On the menu:

·         Best Bloody Mary on the block (Non-Alcoholic)

·         BLT Salad with Black Forest Bacon, Tomatoes and Homemade Blue Cheese Dressing

Peak Pick: Cooking and Baking with Citrus Fruits
Thursday, March 26th
6:00 PM - 8:00 PM

Not only is citrus a delicious way to season a dish, but adding tart, complex citrus juice or zest to a dish can actually enhance other flavors in your dish, giving you a deeper, more complex flavor overall. In this class, we’ll catalog the wide variety of citrus fruits that we stock here in our store, dissect a citrus fruit to discuss its useful culinary parts and discuss some must-have tools for getting the most out of your citrus fruits. You’ll learn how to use citrus juice to cure seafood, how to infuse its flavor into syrup, how to make your own preserved citrus, and how to make lemon curd.
