- 4 salmon fillets (about 6 ounces each)
- 1/2 cup balsamic vinegar
- 1/2 cup orange juice concentrate
- 1/4 cup lemon juice
- 1 tablespoon Dijon mustard
- 1/2 cup extra-virgin olive oil
Remove salmon from marinade, reserving marinade. Pour marinade into a small pot and boil to reduce by half.
Prepare a grill for medium heat cooking. Place salmon fillets on grill and cook for 4 minutes. Flip fillets, baste with reduced marinade and grill until salmon is cooked hrough, 4 to 5 minutes longer. Cover salmon to help it cook completely if needed. Baste with remaining marinade and serve.
