Pear and Arugula Salad with Walnut Dressing

With peppery arugula, mildly sweet pears and crunchy walnuts, this salad is simple yet satisfying. Whip up a quick homemade dressing with some of the pears and walnuts to connect all the flavors. Toss with cooked grains or cubes of tofu to create a substantial lunch.

Ingredients
- 3 ripe pears, thinly sliced, divided
- 1/4 cup walnuts, toasted and chopped, divided
- 1 tablespoon plus 1 teaspoon Champagne vinegar
- 1 teaspoon Dijon mustard
- 2 cups arugula
Method
To make the walnut dressing, combine about 1/3 of the sliced pears, 2 tablespoons of the walnuts, vinegar and mustard in a blender.
Blend until smooth; add additional vinegar or water as needed to adjust consistency.
To make the salad, combine arugula, remaining pears and dressing in a large bowl.
Toss well to coat and top with remaining 2 tablespoons walnuts.
