Low-Fat Creamy "Caesar" Dressing

Makes about 1 cup

Serve this just as you would a traditional Caesar dressing — we bet no one will notice the difference.

  • 2/3 cup (about 5 ounces) drained firm silken tofu
  • 1/4 cup lemon juice
  • 2 tablespoons white or chickpea miso
  • 1 tablespoon white wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic
  • Ground black pepper to taste

Combine tofu, lemon juice, miso, vinegar, mustard, garlic, pepper and 1/4 cup water in a blender and purée until smooth. Keep refrigerated in an airtight container for up to 1 week.
