Mango and Orange Glazed Ham with Scallion-Cheddar Biscuits

Set out a platter of ham, a basket of warm biscuits and bowls of chutney, Dijon mustard and honey mustard for your guests to assemble their own biscuits. These are delightful at a brunch or with evening drinks.

  • 1 (2-pound) fully cooked Black Forest ham
  • 1 orange, Zest and juice of
  • 1/4 cup firmly packed light brown sugar
  • 1 small jar mango chutney
  • 1 teaspoon ground black pepper
  • Scallion and Cheddar Biscuits
  • 4 cups all-purpose flour, plus more for rolling out the biscuits
  • 1 tablespoon granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon fine sea salt
  • 3 green onions, trimmed and very thinly sliced
  • 1 cup grated extra-sharp cheddar cheese
  • 3 cups heavy cream

For ham, preheat the oven to 350°F. Combine chutney, brown sugar, orange zest, juice and pepper in a small mixing bowl. Stir well. Discard any strings on ham. Place ham on a baking sheet lined with parchment paper. Score ham in a diamond pattern using a paring knife. Brush chutney mixture on ham with a pastry brush. Place in the oven and bake until lightly browned and heated through, about 30 minutes. Slice ham and place on a platter.

For biscuits, preheat the oven to 425°F. Adjust the oven rack to the upper third of your oven. Line a baking sheet with parchment paper. 

In a large mixing bowl, whisk together flour, granulated sugar, baking powder, salt, green onions and cheese. Add cream and stir with a wooden spoon until dough forms, about 30 seconds. Scrape mixture onto lightly floured counter, and knead lightly to combine ingredients well. Dust rolling pin with flour and roll dough into a rectangle 3/4-inch thick. Cut out rounds with a 2-1/2 inch round cutter and place on the prepared baking sheet. 

Bake until golden brown, 18 to 20 minutes, rotating baking sheet halfway through baking. Transfer biscuits to a cooling rack to cool for a few minutes. Split biscuits in half. Serve with ham.
