If you think avocado is just for guacamole, think again! This creamy, dreamy fruit (yes, fruit) is an ideal addition to sandwiches, salads and more.
Avocados are considered a healthy fat and provide a wealth of nutrients in each serving, especially fiber and folate. Their creamy texture makes them great as a soup topper or as the base for a healthy salad dressing. Avocado recipes also delve into the breakfast/dessert areas, making a surprisingly wonderful pudding, cake addition or smoothie ingredient.
Avocados mature on the tree but ripen once picked, much like bananas. Their dark green skin makes it more difficult to determine a ripe avocado, but resist squeezing them or removing the stem “plug”! Ripe avocados should have slight give when handled. Unripe avocados should be stored on the kitchen counter to ripen (speed things up in a paper bag) and then stored in the fridge.
Choose somewhat firmer avocados if slicing for salad recipes or adding to sandwiches. Softer avocados blend easily for dressings, smoothies and desserts.
