While many people tend to group them in with berries, cherries are actually stone fruits (in the same family as plums and peaches). Cherries are generally divided into sweet and tart varieties. Rainier and Bing are just two of the sweet varieties, often hailing from Washington or Michigan.

Cherries come in a variety of colors, but look for fruit that is vibrant with smooth, taut skin. Store cherries unwashed in the refrigerator, and wash only just before eating. If you plan on using cherries for more than just snacking, a cherry pitter is a good investment to save time!
