In the warm weather months, watermelon simply can’t be beat for quintessential refreshment. This juicy fruit is perfect all by itself, but we can’t resist enhancing its sweet flavor by incorporating it into a variety of recipes.
When choosing a whole watermelon, there are a few things to look to ensure the melon is ripe. The skin should be muted, not shiny, and there should be a visible creamy yellow spot on the skin where the watermelon rested on the ground during growth. Many people like to knock on the melon — a dull thud is another indicator of an underripe melon. You can also skip these steps and make it extra easy, by purchasing melon halves, quarters, or diced melon from the refrigerated produce area.
Sweet watermelon is a perfect pairing for creamy goat cheese, and it also pops with the addition of sea salt. Other summer favorites like strawberries, tomatoes and basil make for a delicious combo in watermelon recipes.
If you like to use the entire fruit, save watermelon rinds and use for a surprising pickle or add to your water pitcher to liven up your daily water habit.
